Because the bbcode to change the color does not work inside the CODE box. The CODE box is used to display the text code used to do something without the server running that code (otherwise the server would run the code and the text would not be visible). Like this:

and here is the code that does that:

if you would like to change the color of our listings, then you should edit each of your posts and simply replace the code tags with quote tags. After you do that, you should be able to change the color.
